How I used up my leftover cooked quinoa. Over medium heat boil:
1 cup soy or other non-dairy milk (I used vanilla soy)
1 tsp vanilla extract
1/2 tsp cinnamon
1/4 handful of raisins
Over medium heat cook for 15 minutes. Add 2 cups cooked quinoa and stir. Cook 5 more minutes. Remove from heat and serve topped with fresh fruit. Delicious! #vegansofig #vegan #whatveganseat #quinoa #easyrecipe
